Chocolate Brownie Heaven
Wonderfully naughty. We just couldn't resist introducing you to these. So put your feet up with a good book and a big mug of tea and enjoy!
250g/9oz unsalted butter
200g/7oz 70% cocoa solid dark chocolate, broken into small peices
150g/6 oz chopped nuts (optional)
80g/23/4oz cocoa powder, sifted
65g/21/4oz plain flour, sifted
1 teaspoon baking powder
350g/121/2 oz caster sugar
4 large eggs
Preheat oven to 180/350 gas 4. Line a rectangular baking tin(30cm/12 inch) with greaseproof paper.
In a large bowl over some simmering water, melt the butter and the chocolate and mix until smooth. Add the nuts if you are using then and stir together. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate mixture. Stir together well. Beat the eggs and mix in until you have a silky consistency.
Pour the brownie mix into the baking tray and place in the over for about 25 mins. The brownies should be slightly springy on the outsie but gooey in the middle. Cool on a wire rack and cut into squares. These make a great desert served with a dollop of creme fraiche mixed with some orange zest.
